Lavender Milk Tea

I’m half-British, so my natural reaction to a tense or stressful moment is to make a good cup of strong tea. The addition of lavender makes this one even more comforting – almost like a spa in a cup.

Ingredients (serves 2):
2 strong tea bags
600ml boiling water
200ml full-fat milk
2 teaspoons dried lavender buds
2 tablespoons sugar or honey, or to taste

Bring the milk to a simmer in a pot, then add the dried lavender buds. Take the milk off the heat and leave to infuse for 20 minutes.

Strain the milk, discarding the lavender buds. Using a hand blender or milk frother, froth up the milk to create some foam.

Brew some strong tea, by pouring boiling water over the tea bags in a teapot. Add the sugar if you want it sweet. Leave to steep for around 5 minutes. Take the tea bags out and discard.

Pour the tea into two mugs, then add as much milk as you like, spooning some of the foam on top. Garnish with some extra lavender buds if you want to be as extra as me ~~
